All meat and game is sourced from the state's best suppliers, with all meat hung for no less than 14 days to ensure maximum tenderness.

The butchery is able to order in a large variety of Game Meats for the more adventurous palates. Goose, pigeon, spatchcocks, emu, crocodile, kangaroo, pheasant, venison, buffalo, camel, smoked ox tongue and black pudding. For that special occasion we can make up ‘Turducken’ (Turkey stuffed with duck stuffed with chicken)
Our own specialties included Flat Pack Marinade Shoulders, butterfly chicken and French garlic scotch fillet and our multi-award winning range of Sausages.
M & J's Butchery also supplies a large number of local coffee shops and Bed and Breakfast’s as well as smaller function centres -
Arancia, Bed of Roses, Old Convent Café, Anson Tea House, Rocking Horse Lounge and we proudly supply Anna’s Cuisina who supply us with a large range of gourmet pies.
Pre-packed meat is also available at Country Fruit in Bathurst.

‘Manners and Borg' was established in 2005 with Michael and Josephine Manners (formerly of Selkirks) to create restaurant quality heat and serve dishes.
They also make and supply a large range of terrines and rillettes to the Blue Mountains and quality food to Country Fruit in Bathurst.
